Pork Fillet with Plum and Wine Sauce

Serves: 4


500g Pork Fillet
50g Butter
2 tbsp Flour
500g Plums, stoned
150ml Red wine
1 pinch cinnamon
salt and pepper to taste
fresh parsley, to garnish


Preheat oven to 180c
Sieve flour into a bowl. Season with salt and pepper and place meat inside. Toss pork to coat.
Melt the butter in a frying pan and add the pork, fry until golden brown on both sides.
Transfer meat to a casserole
Puree the plums in a blender and combine with cinnamon and wine. Mix well. Pour over the Pork and cook for 30 minutes.
Serve hot garnished with parsley
